Chicken Tacos at Home
Chicken thighs are forgiving for grilling and braising, while breasts cook quickly and require closer temperature control. Either can make excellent tacos when sliced across the grain or shredded with flavourful cooking liquid.
Choose the method before seasoning
A quick skillet filling needs smaller pieces and fast seasoning. Grilled chicken benefits from a marinade and resting. Braised chicken can absorb sauce during slow cooking.
Avoid overcooking
Use a digital thermometer and follow current safe-temperature guidance. Remove chicken once safely cooked, let larger pieces rest briefly, then slice or shred.
Reduce cooking liquid
For shredded chicken, simmer excess liquid until it coats the meat. Watery chicken will soak through tortillas.
Add contrast
Pair rich or smoky chicken with fresh salsa, cabbage, lime, radish, or pickled onion.
