Fish Tacos: Grilled, Fried, and Fresh

Grilled and fried are different experiences
Grilled fish should remain moist and lightly seasoned. Fried fish should have a crisp coating that does not overwhelm the fish. Neither style benefits from sitting assembled for a long time.
Slaw should stay fresh
Cabbage, radish, or other crisp vegetables provide structure. Heavy dressing can make the taco soggy, while dry, thick shreds can be difficult to bite. The best slaw has enough acidity and moisture to refresh the fish.
Sauce should be measured
Crema, mayonnaise-based sauce, salsa, and avocado can all work. Too much sauce hides the fish and weakens the tortilla.
Use lime at the end
Fresh lime brightens seafood, but adding it far in advance can change the texture. Squeeze it immediately before eating.
