Taco Food Safety at Home
Taco meals combine raw proteins, ready-to-eat garnishes, hot fillings, and cold sauces in a small workspace. Preventing cross-contamination and checking internal temperature are more reliable than judging doneness by colour.
Separate raw and ready-to-eat foods
Use separate boards, plates, utensils, and storage areas for raw meat, poultry, and seafood. Prepare salsa, lettuce, herbs, cheese, and other ready-to-eat toppings away from raw-protein juices.
Use a digital thermometer
Health Canada advises checking safe internal temperatures with a food thermometer. Current guidance includes 71°C (160°F) for ground beef and pork, 74°C (165°F) for poultry and ground poultry, and 70°C (158°F) for fish.
Control holding temperatures
Keep hot fillings hot and cold toppings cold. Put out smaller amounts and replenish them rather than leaving the entire batch at room temperature throughout a long gathering.
Cool and reheat responsibly
Refrigerate leftovers promptly in shallow containers. Reheat cooked fillings thoroughly and discard food that was left out too long or handled unsafely. When in doubt, use official local guidance rather than guessing.
