Building a Better Taco Salad

A taco salad should be a composed salad, not a taco filling dumped onto lettuce. Temperature, moisture, and crunch need to be managed separately.

Dry the greens

Wash greens in advance and dry thoroughly. Wet lettuce dilutes dressing and makes tortilla strips soggy.

Cool very hot filling briefly

Warm meat or beans are appealing, but steaming filling can wilt the entire bowl. Let it stop steaming before adding it to delicate greens.

Use dressing carefully

Salsa, lime dressing, or a crema-based dressing can work. Toss lightly, then offer more at the table. Cheese, avocado, and sour cream already add richness.

Add crunch last

Tortilla strips, chips, radish, pepitas, or crisp cabbage should be added immediately before serving.
