Choosing Tortillas and Taco Shells
The tortilla is not packaging; it is a major ingredient. Size, thickness, freshness, and warming method determine whether the taco tastes balanced and stays together.
Corn tortillas
Corn tortillas bring toasted maize flavour and suit many grilled, braised, and fried fillings. Small tortillas make street-style tacos; thicker or doubled tortillas help with juicy fillings. Check ingredient labels if gluten or allergen concerns exist.
Flour tortillas
Flour tortillas are soft and flexible, making them useful for breakfast tacos, larger fillings, and northern Mexican or Tex-Mex styles. Warm them briefly so they bend without becoming dry.
Crispy shells
Preformed crispy shells provide crunch but break easily. Fill them immediately before serving and avoid overly wet ingredients. Freshly fried or baked tortillas can create different textures but require careful handling of hot oil or equipment.
Match size to filling
A small tortilla needs a modest portion. Overfilling causes tearing and hides the tortilla. Larger tortillas invite more filling but can shift the meal toward a burrito-like format.
